Today, let’s hit two birds with one stone. Fill our tummies with this yummy recipe from Chiva-Som Health Resort in Thailand which will take most of us to days of endless sunshine, wellness and relaxation.
Salmon is an incredibly nutritious fish that is loaded with beneficial nutrients, minerals and antioxidants like Omega-3 Fatty Acids, protein, B vitamins, potassium, selenium, and Astaxanthin – many of which are good for reducing the risk of heart diseases, obesity while protecting brain health and hoping to fight inflammation.
INGREDIENTS
- 600g salmon fillet diced
- 1 tbsp red curry paste
- 20g coriander finely sliced
- 20g spring onion sliced
- 50g long parsley finely sliced
- 70g red onion, small diced
- 10g dill
- 1 tbsp ground rice powder
- 0.5 tsp salt
METHOD
In a large mixing bowl, combine all ingredients. Divide the mixture into 50 g (1¾ oz) balls and form into cakes. Heat a nonstick pan and pan fry fish cakes on each side until golden brown. Serve with sweet chili sauce on the side.
RED BELL PEPPER SAUCE
- 300g Red pepper, roasted and peeled
- 50g onion, chopped
- 10g Garlic cloves, chopped
- 1 tsp Salt
Blend all ingredients in a food processor. Transfer the mixture to a sauce pan, simmer and stir frequently until sauce consistency is reached. Remove from heat and allow to cool.
MANGO CHUTNEY
- 200g ripe mango, diced
- 1 tbsp lime juice
- 10 g fresh ginger, chopped
- 10 g green spring onion, chopped
- 5 g Green chili
- 0.5 tsp Salt
- 10 g Coriander leaves
Combine all ingredient in a saucepan simmer with low heat while stirring frequently until thick. Remove from heat and set aside.

- Protein: 2 g
- Carbohydrate: 2 g
- Total fat: 1 g
- Serving amount: 40 g
